Free range means free range

All animals, big or small, are meant to roam and at Lester's Bison Farm, that's exactly how we ranch.  Located on 160 prime acres of green pastures, our bison herd roam freely as nature intended.  That also includes our other livestock of cows, pigs and chickens!  Never do we pen raise or pen feed our animals.  Our cattle is pasture raised, our pigs love to dig and our chickens roam freely!

Healthy & Delicious!

Bison meat is naturally flavorful and tender, best yet, it can be used in any red-meat recipe! Bison meat is also a nutrient dense food because of the proportion of protein, fat, minerals and fatty acids to its caloric value.  It's lower in fat and cholesterol than beef, chicken or salmon and it's good for you! Heart healthy bison is higher in protein, iron and Vitamin B-12 than beef!

Light up the grill!

A grill is the best place to cook bison and it's easy to do!  Lightly season your bison products, sear the meat and reduce the flame.  Bison steaks are best when cooked rare to medium to maintain the moisture and flavor of the meat.  Bison meat will cook quickly so be sure not to overcook! The perfect internal temperature on a bison burger is 160 degrees, roasts & steaks 145 degrees.

Keeping it clean

Naturally raised bison interact with the evironment as Mother Nature intended.  Their movement across the prairies promotes plant regrowth and a healthy ecosystem for all of us! Which is why we take harvesting very seriously to ensure our environment for generations to come. We're doing our part to keep our land clean!

The tradition continues

Under the guiding hand of Ron Lester, The Little Bison Co was established as the farmer market division of Lester's Bison Farm. Together, we bring our customers the very best of free range, grass fed and hormone free meat products.  It is with great appreciation that I continue the legacy of Ron Lester, Lester's Bison Farm and the quality and care of our ranching practices.
